Eggs in Purgatory
1 jar Dave’s Gourmet Red Heirloom Pasta Sauce
⅛ - ¼ tsp Dave’s Ghost Pepper Hot Sauce
8 large eggs
salt & fresh cracked black pepper
minced parsley for garnish
and a cup to collect your tears
In a medium saucepan, mix Dave’s Gourmet Red Heirloom and Dave’s Ghost Pepper Hot Sauce.
Warm sauce on medium heat to a simmer. Stir occasionally so that all sauce is at a uniform temperature.
Break an egg into a small cup. With a spoon, make an indentation in the sauce and slide the egg from the cup into the sauce. Continue with the remaining eggs.
Sprinkle eggs with salt and pepper. Cover the saucepan and cook the eggs until set, approximately 2-3 minutes.
Garnish with parsley. Serve hot with warm crusty bread.
