1 bottle Dave’s Gourmet Creamy Ginger Citrus Hot Sauce
1 pound center cut boneless pork loin, cut into 1/4” thick chops
fresh cracked black pepper
1 cup fresh pineapple, cut into small dice
3 green onions, sliced (green and white parts)
¼ cup fresh cilantro, minced
12 corn tortillas
1 lime, cut into 6 wedges
1. In a mixing bowl add pork chops, a pinch of both kosher salt and fresh cracked black pepper, and 6 oz of Dave’s Gourmet Creamy Ginger Citrus Hot Sauce (approx. ¾ of the bottle). Mix well to cover pork chops with sauce. Let sit for 15 minutes.
2. While the pork marinates, heat a gas grill or a grill pan on the stovetop to 400°F. When the grill or grill pan is hot, grill the pork chops 2–3 minutes a side until they are cooked through. Place grilled pork chops on a plate and loosely cover with foil to rest for 5-10 minutes.
3. While pork chops are resting, prep your pineapple, green onions and cilantro. After 5-10 minutes of resting, cut pork chops into ½” pieces. Toss the chopped pork with the remaining Creamy Ginger Citrus Hot Sauce. Set aside
4. Grill the tortillas. Each taco will have 2 tortillas, so there will be 6 tacos total. Grill one side of the tortilla pairs and then flip to the other side. The tortillas will become more pliable after they are heated. Assemble the tacos as follows: corn tortillas topped with pork, pineapple, green onions and cilantro. Add a squeeze of lime and enjoy!
